Simple steak with a salad is an easy way to end a busy day. Our little guy is really getting into my blog and tonight he wanted to make sure that he gave his thumb up on dinner. It was a new sauce for him and his exact words: “very good mom, you should publish it in your blog”. The sauce has a nice pick me up flavor to it. The flavor of wine and vinegar is quite nice as it lingers in the house.
Tonight’s April 14, 2010 dinner:
Steak with Shallot Wine Sauce
Strawberries with cream and brown sugar
STEAK WITH SHALLOT WINE SAUCE
4 fillet mignon steak, 1 to 1½ thick
2 tablespoons olive oil
2 tablespoons butter
½ cup chopped shallots
1 tablespoon thyme leaves
1 tablespoon red wine vinegar
1 cup dry red wine
Salt and freshly ground pepper
In a heavy skillet bring oil and the butter to a sizzle. Add the steaks and cook over medium heat, 8 minutes on each side for medium. Remove the steaks from the pan and cover to keep warm. Add the shallots and the thyme to the pan; stir and cook for 1 minute. Pour the vinegar and the wine: simmer for 2-3 more minutes. Season with salt and pepper. Slice the steaks crosswise and pour the sauce over the steaks
Butter lettuce, green leaf or Romaine lettuce with a vinaigrette made of olive oil, vinegar and salt. My rule of thumb is 1 tablespoon of vinegar, 3 tablespoons of olive oil. In a bowl, mix the vinegar with the salt until the salt is dissolved, add the olive oil and mix well. Toss in the salad and enjoy.
