Life sometimes has a way to just have a life of is own.  I wrote this posting while vacationing and never sent it. So here it is.

Greetings from Florida!! 

Spring break and we decided to spend it in sunny Florida and going to Disney World. 

We started out journey in Ft Lauderdale.  Our friends have a boat and were kind to take us on it for a ride on the Atlantic Ocean. We set anchor and went diving.  Well, I did not dive, but our friend did.  Ten minutes later, up came four beautiful lobsters.  Now, I must say, if you ever had freshly caught lobster and eat them right the way, you know that nothing compares to that.  The texture, the flavor is absolutely unbelievable. I remember the first time our friends served us lobster… well it was the end of eating it at restaurant. The lobsters were steamed, cleaned and the meat nicely cut on bite size. It was served with melted butter on the side for dipping. 

The following night our friends served us Wahoo, the fastest fish in the ocean.  It was cut in chunks, dipped in egg then coated with seasoned Panko.  Fried in a quarter of an inch oil until golden brown. The sauce was delicious and so easy to prepare: sweet pickle relish, a little bit of the relish juice, and all mixed with mayonnaise.  Wonderful, could not stop eating.

Disney was great. We had the best spot to enjoy the light parade and the fireworks. We also enjoyed the wonderful Florida rain at Disney, and that I have to say, it was fun.
