Yesterday was my husband birthday.  In celebration of his special day he had a request: Pasta, homemade pasta. More specifically he wanted homemade ravioli, canelloni and lasagna.


Well his wish is my command and I was more than happy to prepare what he wanted.  We had a small gathering at the house and started the evening with Champagne, cheeses and freshly sliced bread.  As the Champagne was flowing the pasta was warming up in the oven.  Lasagna and canelloni are always best the day after, as the sauce will set and infuse the pasta with wonderful flavors. The raviolis, made the day of the celebration, had this huge 13.5 quart pan to be prepared in it. 

We started the candle light dinner with a sampler of raviolis with two different sauces.  One butter sage, one light tomatoes sauce.  Fallowed by ricotta canelloni, and then lasagna.  Red wine at this point replaced the Champagne.

Good times was had by all.  Has the childrens were eying the raviolis and could not wait a second longer, I do not have a picture of the raviolis, sorry.

To my husband:  Happy Birthday My love, may all your wishes and dreams come through. May your heart always be filled with love and happy memories. I love you and always will.
