Morning Ritual – dinner plans in the making

Published on January 13, 2011 | Beef, Veal and Lamb

Morning ritual.

By the time I have finish my espresso  early in the morning, I usually have a pretty good idea of what I am going to fix for dinner that evening.  This morning I was out staged by my wonderful boy who wanted to have lamb chops.  I was thrilled! How exciting! he loves lamb as much as I do.

The  reason he likes lambs chops, is that I take a rack of lamb and split it in small chops and he can actually eat them with his hands.  I was raised that we do not eat our food with our hands, and as the apple does not fall too far from the tree, the little guy rarely eats with his hands also.   This dish is the exception for some reason and he devour it.
I do not have a specific recipe for this.  I take the rack of lamb, remove all the fat around the bone area.  Sprinkle salt and pepper.  In a large skillet on hot heat I heat some olive oil.  When the oil is hot, I add the chops and add some rosemary.  I cook them to desired doneness.  Serve them nice and hot.
We enjoyed a great glass of red wine.
