Pizza.


My son wanted to go out to dinner for pizza, I wanted to stay home.   I love pizza, but I was too tired and it was too hot to be outside another minute.  So I put on my “Iamgoingtowinthisbattleifmylifeondependsonit” face with my son and I tried my best to convince him that it would be a lot more fun to prepare it at home. Well is easy to see who won that battle, me, good old mom. Of course I had to make some concession, but I did not mind, I was staying home in the coolness of my house…no waiting to be seated….life was good.

We are very fortunate to live next to four grocery stores, one at each  corner of a major intersection. How lucky is that. One mile from home.  Ah!!! Shall I say more!!!. To Wholefood we went and we picked up the pizza dough. Also purchased some great Prosciutto di Parma, mozzarella and  goat cheese.

At home with our groceries with pulled out the rolling pin, the wooden board. My son and I decided to each created our own pizza. Fine by me seeing that I like anchovies and he does not even want to hear the word anchovies.  Mine was a straight forward Pomi chopped tomatoes, mozzarella, goat cheese, Prosciutto di Parma and anchovies.  My son: tomatoes, loads of mozzarella that he placed on the pizza as a happy face. In the hot oven preheated at 375 for 20 or so minutes they went. Cheese melted, crust turning golden brown it was ready to be pulled out and enjoyed. We each finished every bite of it and wanted more.

Had a ball cuddling on the couch watching a kid show on Cartoon Network… it does not get any better than this.
