Tomatoes, mozzarella, roasted bell peppers.
Tonight was hors d’oeuvres night. I have been cooking every night during the past week and tonight I needed to do something different and fun.
We had some jalapenos and therefore made some stuffed with cream cheese. I also had some left over roasted bell peppers from last week that I place under olive oil and decided to put them to good use tonight. Instead of basil I used fresh thyme and lots of cracked pepper. Perfect snack that made up a great fun dinner.
This dish is also perfect for any summer party or pot luck. Make ahead and refrigerates it is perfect for any occasions. You can top it with slivers of red onion or thyme. I love lots of cracked peppers on it, but I leave that up to you mainly if the little one are around.
For the little one, use cherry tomatoes, they will love the small bite size.
I did not take the pictured of the stuffed jalapenos, sorry.

Stuffed Jalapeno Peppers
Tomatoes, Mozzarella and Roasted Bell Pepper with Thyme
TOMATOES, MOZZARELLA AND ROASTED BELL PEPPER
1 Large mozzarella
2 large tomatoes
Roasted red bell peppers
salt and pepper
Slice the mozzarella and tomatoes. Arrange one slice of tomato, 1 slice of mozzarella. Top it with roasted bell peppers.
Salt and freshly ground cracked black pepper. Olive oil and fresh thyme.
