We are all going through a challenging time in our world. We are worried about the health of our loved ones, our neighbors, and ourselves as well. But despite this stress and anxiety, we still need to eat and feed our families.

That is why I have gone through all of my recipes, and hand-picked eight that I feel are ideal for this moment in our history. These recipes are delicious, nutritious, and comforting. They are also easy-to-make, so do not worry if you are brand new to the kitchen.

 

Carrot Salad

I have to admit I am not a fan of carrots. I will never grab one, peel it, and just bite into one. However, one thing that I adore is this classic French recipe for a grated carrot salad. I always enjoyed the fresh and crisp bite of the dish.

Pork tenderloin, the other dark meat, is one of my favorite ones to cook with. Tasty, tender, and full of flavor. With this recipe, you have the choice, if time permitting, to marinate the meat. Of course, overnight would be fantastic, however, it is not required.

Pasta is always a fun dish to prepare.  There are a million ways to prepare them.  Food for the soul. The fresh tomatoes added to the mild Italian sausage with a hint of fennel are a fantastic combination. Mild and sweet with lots of boldness. Most of all, not so much fat as is counterparts.

With all that is going on around us, therefore, we all are homebound with our families, it can be a bit of added stress to come up with meals with what is in our pantry. This banana upside-down recipe was created because our bananas were getting mature faster than we could eat them. A few handy ingredients a delicious dessert is served and a smile on everyone’s face. Nothing like a tasty homemade dessert, right?
