Chicken Thigh with Mushrooms – Simple and delicious

Chicken tights with mushrooms.

After a wonderful vacation, settling back to our routine has been hard. I guess our body and mind are still basking in the “dolce far niente” mode of life.

With a great busy day, settling in my kitchen was relaxing. I had pulled out some wonderful  thigh to prepare them with orzo pasta and peas. As I was looking at the chicken cooking in the skillet, I just knew that something needed to be done to give it a bit of a spin. As I looked in the refrigerator I found some wonderful little white mushrooms that needed to be enjoyed. Sliced them up and in the skillet with the chicken they went. Just like that the dish looked happy…. well… I guess I am the one that was happy as well as my  family.

Skinless chicken thigh
Olive oil
Salt and pepper
Mushrooms, cleaned and sliced
1 garlic clove finely sliced
Salt and pepper
1 tablespoon lemon juice
1 tablespoon parsley
In a large skillet heat the olive oil to medium heat. Add the  tight and cook on both sides until nice and golden on the outside, tender and cooked on the inside.
Add the mushrooms to the skillet and cook until tender and golden. Add the lemon juice , garlic and parsley and cook until the garlic is tender.
