Egg, bacon and muffin.
I am an early riser. I really enjoy the time alone, well almost if I do not consider my two little hugs and scratches demanding little dogs.
The house is quiet, the espresso ready to be enjoyed sip by sip. The plan of the day being put together. I love this routine.
This morning it was not different except I wake up way too early, mainly for a Sunday morning and I was hungry. In the kitchen I went and decided that an egg, bacon and muffin was it. Why??? Do not ask…. I have no idea but I wanted one. So the stove I went…. and here is what I came up.

GIANGI’S EGG, BACON AND MUFFIN
1 English muffin split
1 slice of Swiss cheese
1 slice of bacon
Salt and pepper
Split the bacon in half and cook over medium high until nice and crisp.
Toast the muffin in the toaster until nicely crisp. Spread some mayonnaise with some mustard on both sides of the muffin.
Cook the egg over medium. Salt and pepper . When almost ready add the Swiss cheese on top of it.
Place it over one piece of muffin, add the bacon and cover with the other piece of muffin.
