Here we are on the tenth day of the 12 Recipes of Christmas and it goes without saying that we always leap to our favorite recipe when we have not given a thought of what to have for dinner… and with all the Holiday wrapping, festivities, wonderful parties… well dinner takes second place on our priority list. Luckily for me I have a well stocked freezer by my favorite person, Pete at Personal Gourmet Foods. Grabbing a rack of lamb meant dinner would be ready in a flash, everyone will be happy and I will be spending more time enjoying my family.
I am re-sharing our go to recipe that graces our plates more often than we want to admit.

On the tenth day of Christmas
my true love cooked for me
Ten lamb leaping
Nine lady fingers in tiramisu
eight pork chops a milking
seven shrimps a swimming
six meatballs a laying in a bed of pasta
five golden onion rings
four Cornish hen
three French Clafoutis aux poires
two Dover sole with caramelized onions
and a poached pear in a wine sauce

LAMB CHOPS
1 rack of lamb, separate in between the bones
salt and pepper
rosemary
1 tablespoon olive oil
Pat the chops dry and let them rest with sprinkled salt and rosemary for 5 minutes.
In a large skillet put the olive oil and warm over high heat. When hot, but not smoking, add the chops and cook, turning twice until desire doneness
