Mortadella Caprese Sticks, how fun does that sound? I must tell you I love mortadella and when Citterio contacted me to do a post and send me some to try, I jump on it. Yes,  my weakness.

As I was getting together with a friend for a quick drink, and I do not drink if I do not have food, the thought of combining all my favorite ingredients came to life. Of course, a Caprese salad is a bit difficult to eat at cocktails time, thus decided to make Mortadella Caprese Sticks with it. Great combination.

The delicate sliced of mortadella are perfectly sliced and as soon as the package is open you get to enjoy them.  With mozzarella, fresh basil from my garden,  olive oil, and balsamic vinegar you too can enjoy this fun snack, but can also convert it into a salad for more of a dinner salad.

So here is my own version of Mortadella Caprese Sticks.

Mortadella Caprese Salad

Ingredients

Original recipe yields 4 servings

  • Mortadella by Citterio
  • Mozzarella ciliege (small balls)
  • fresh basil leaves
  • olive oil
  • balsamic vinegar
  • salt and pepper

Instructions

  1. Cut a slice of mortadella in half. Fold half of the mortadella and pass one end thru the mortadella. Add the basil, mozzarella, tomatoes, and basil, while weaving the mortadella in between.

  2. Place on a dish. Sprinkle with salt and pepper, drizzle olive oil and balsamic vinegar.
