Oven baked onion rings  with cumin dipping sauce instead of deep frying them. Fun afternoon snack that the whole family will love.  Here we are on the fifth day of the 12 recipes of Christmas and sharing my golden rings recipe, or shall I say golden onion rings…

First time for everting, and this is my first time preparing onion rings and decided to step out of my comfort zone and use the spices that never even get look at: cumin, paprika and coriander. Used them all together for a fun afternoon snack.  For the dipping sauce play with  it as you like. I love the combination of cumin and lemon juice, but you can add more tabasco for a bit more of a zing… Have fun with it but add little at the time.

I decided to bake the onion rings instead of deep frying them. I did however fried a couple and they were yummy too. Is up to you which way you wan to go with this recipe: baking or deep frying.

My true love cooked for me
Five golden onion rings
Four Cornish hen
Three French Clafoutis aux poires
Two Dover sole with caramelized onions
and a poached pear in wine sauce

OVEN BAKED ONION RINGS WITH CUMIN DIPPING SAUCE

For the onion:

1 large yellow onion, peeled and cut in rounds 1/2 inch thick

1/2 cup unbleached flour

1/2 teaspoon paprika

1/8 teaspoon salt

1/8 teaspoon pepper

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1 cup heavy cream

1/2 teaspoon corn starch or cream of tartar

For the dipping Sauce:

 2 tablespoons mayonnaise

1/2 cup sour cream

1/4 teaspoon coriander

1/2 teaspoon cumin

1 tablespoon lemon juice

Splash of Tabasco

Salt and pepper

Preheat oven at 400º. Line a cookie sheet with parchment paper.

Prepare the dipping sauce using all the ingredients above: mayo, sour cream, coriander, cumin, lemon juice, tabasco, salt and pepper. Mix well and place in the refrigerator until ready to use.

In a large bowl mix, flour, paprika, salt, pepper, cumin and coriander. In another bowl whisk, heavy cream and corn starch.

Dip the onion rings into the heavy cream and roll them well into the flour mixture. Shake any excess flour and place the onion rings on the cookie sheet. Lower the oven temperature to 375º. Bake turning once, for about 20 minutes or golden brown.

Serve alongside dipping sauce.
