Orange salmon. A very quick and impromptu dinner last night. I did not have any lemons in the house to use as a base when I roast the salmon in the oven, therefore decided to use an orange instead with our salmon.  The bed of oranges as well as the top slices infuses the salmon with a wonderful summer flavor. Healthy and super easy to assemble, it will become your go to dish for salmon. Adults and kids will love you for it. The best part is thay you can prepare it with other vegetables in the oven and dinner can be served in less than 20 minutes. How easy is that for a school night?

Delicious and fast. Roasted potatoes and asparagus and voila dinner was served.

Orange Salmon - The quickest dinner ever

Original recipe yields 4 servings

  • 4 - 6 ounces - salmon fillets
  • 1 orange sliced


  1. Line a cookie sheet with aluminum foil. Place slices of orange on it and top them with the salmon fillets

  2. Sprinkle salt and pepper and cover with a few more slices of oranges.

  3. Cook in the preheat oven at 375 for 15 minutes

  4. Remove from the oven, With the back of a fork press down the top slices of orange so the juices can run over the salmon. Serve on a warm plate discard all orange slices.

  5. Drizzle with olive oil.
