Fresh tomatoes, fresh basil and mozzarella that is all it took for tonight’s dinner.  We have not had pasta in a while and we were in the mood for a new way to enjoy a great bowl of it tonight.

I wanted to have the raw tomatoes but knew I could not get away with it.  I seared them with a bit of olive oil and added the basil leaves last.

The fresh mozzarella give a refreshing twist to the pasta. No meat just plain.

Vanilla ice cream with sugar strawberries to end another great summer day.

Pasta with Fresh Tomatoes, Basil and Mozzarella

  • 1 pound Farfalle pasta
  • 2 large diced mozzarella
  • 4 large, cut seeded and diced tomatoes
  • 1/4 cup thinly sliced basil


  1. Boil a large pot of salted water and cook the pasta according to the package directions. When done drain, place back in the cooking pan and add the butter.

  2. In a large skillet sauté the tomatoes with the olive oil, 5 minutes. Remove from the heat and add the basil.

  3. In a large bowl add the pasta, the tomatoes and mix well. Add the mozzarella and give it a last light folding.

  4. Serve immediately
