Spinach Salad with Citrus. This salad blends the best of summer ingredients for a fresh salad and puts to great use grapefruits and oranges. The combination of tart fruits and spinach makes this a nice palate cleanser. Easy to assemble and very light and refreshing. The most delicious salad I have made in the past months.
Spinach salad with citrus is a perfect addition to any menus. Excellent side dish for any fish: Tequila Shrimps with Prosciutto and Basil. Or with Idividual Meatloaf, And last but not least any poultry dish as Chicken Spatchcocked
The possibilities are endless as you can just enjoy it as a light lunch on the go.
To section your oranges and grapefruit:
- First, cut off the end base of each so it will stand steady on a flat surface.
- Then remove all the outer skin and white pit with a steady and curved movement following the fruit.
- With a very sharp small utility knife cut down and separate the skin and the membrane of the orange and grapefruit. Gently pull out or slide off with the knife.
The pulp remaining after all the sections have been removed has a lot of juice still left, do squeeze the remaining white pit to collect the remaining juice.
I always remove the long stems of the spinach, personal choice of course for the spinach salad.
Spinach Salad with Citrus

2 tablespoons olive oil
1 tablespoon white wine vinegar
2 tablespoons grapefruits juice
½ teaspoon sugar
1/2 grated orange zest
⅛ teaspoon salt
⅛ teaspoon ground cinnamon
4 ounces stemmed fresh spinach, washed and dried
1 grapefruit, peeled and sectioned
1 orange, peeled and sectioned
¼ cup chopped almonds, toasted
Mix together all the dressing ingredients in a small bowl, cover and chill until ready to serve.
Place the spinach, fruits in a large bowl. Toss with enough dressing to coat well. Sprinkle the almonds over the salad and toss again.
