Ingredients

  • 0.5 cup unbleached all purpose flour 1/2 cup unbleached all purpose flour
  • 0.75 tsp salt 3/4 teaspoon salt

  • 0.25 cup olive oil 1/4 cup olive oil

  • 8 garlic 8 large thinly sliced garlic cloves
  • 0.5 lbs mushrooms 1/2 pound sliced mushrooms
  • 0.25 tsp chili pepper 1/4 teaspoon dried red flakes of chili pepper
  • 1.5 cup sodium free chicken stock 1 1/2 cups sodium free chicken stock
  • 0.5 cup white wine 1/2 cup white wine
  • 2 tbsps bread crumbs 1 to 2 tablespoons bread crumbs
  • 0.5 lemon juice 1/2 lemon juice
  • 4 tbsps flat-leaf parsley 3 to 4 tablespoons fresh flat-leaf parsley

Instructions

  1. Combine flour, salt and pepper in a plastic bag. Add the chicken breasts one at the time and shake to coat well. Set aside.

  2. In a large skillet add the olive oil and butter and cook on high for 2-3 minutes. Place the breasts in the skillet and cook on high until chicken is golden brown.

  3. Turn chicken and add garlic, mushrooms, chile flakes, and white wine and chicken broth. Cook for 8 to 10 minutes or until the chicken is cooked through.

  4. Add bread crumbs and lemon juice and remove from the pan. Serve with juices and parsley.
