Salmon with Spicy Maple Sauce

Ingredients

  • 6 tablespoons maple syrup 6 tablespoons maple syrup
  • 0.5 cup water 1/2 cup water
  • 2 garlic 2 minced garlic cloves
  • 1 teaspoon pepper flakes 1 teaspoon dried hot pepper flakes
  • 0.25 teaspoon salt 1/4 teaspoon salt
  • 6 ounces salmon fillets 4 1 inch thick (6 ounces each) salmon fillets

Instructions

  1. In a small heavy saucepan combine the maple syrup, water, gingerroot, garlic, red pepper flakes, and salt and simmer until reduced to about ½ cup. Cool basting sauce.

  2. Preheat broiler.

  3. Arrange salmon, skin side down, on oiled rack of broiler pan and season with salt. Broil salmon about 4 inches from heat 4 minutes. Brush salmon with sauce and broil until just cooked through, about 6 minutes more.
