  • prawns already cooked and tail removed prawns
  • Belgian endives cleaned and sliced Belgian endives
  • radicchio cleaned and sliced radicchio
  • tomatoes sliced and seeded tomatoes
  • cucumber outer skin removed and thinly sliced cucumber
  • carrots shreeded carrots
  • green leaf salad torn into small pieces green leaf salad
  • 3 tbsps olive oil 3 tablespoons olive oil
  • 1 tbsp lemon 1 tablespoons juice lemon


  1. Remove the tail from the prawns. In a large bowl add the olive oil, lemon juice or vinegar and salt. Mix well.

  2. Add the remainder ingredients and mix well gently.

  3. Serve on chilled plates.
