Warm the olive oil in a skillet over medium heat. Season with salt and pepper, and add the pork chops and fry for 4 to 5 minutes on each side, until golden brown.

Remove the pork chops from the pan and keep them warm in the oven. No need to cover them.
Add the white wine to the skillet and deglaze. Bring to a simmer over low heat and slowly stir in the cream and mustard. Add the rosemary and season with salt and pepper.
