It is this amazing butter oil sauce with lots of garlic and spicy chili, where shrimp are cooking to perfection.

A very popular dish that can be enjoyed as a main course or as an appetizer. Either way, do not forget to grab your favorite French bread to soak up all the juices.

Ingredients needed to make this recipe of garlic shrimp

This is a short introduction. The ingredient list is also brief. It includes essential items that you may already have in your pantry. Please read the recipe for complete instructions.

Shrimps: Large ones are best suited for this recipe. Ensure that they are all the same size for even cooking. Leave the tail shell on.

Garlic cloves: Minced and chopped. The smaller they are, the more readily they release their natural oils, giving your shrimp a fantastic aroma.

Red chili: adds a kick of heat to this dish. Mild or intense, I leave that up to you.

Olive oil: one of the ingredients to cook your shrimp in.

Unsalted butter: I always use unsalted butter in my cooking and baking to control sodium intake. Salted butter not only adds too much salt to your dish, but it also changes the flavor.

Parsley: Adds the finishing touch to your dish. Parsley pairs well with the shrimp and releases its oils into the buttery oil sauce.

French baguette: to soak up the butter, garlic, and chili. A must!

How to make these delicious garlic shrimp

For all my recipes, please assemble all ingredients before starting to cook or bake.

  • Preheat the oven to 425°F.
  • While the oven is getting hot, peel the shrimp, leaving the tail and first hard shell intact, and remove the interior black vein (deveining)
  • Using individual gratin dishes, sprinkle the garlic and chopped chili into each dish. Divide the oil and butter among the dishes.

  • Place the gratin dishes on a rimmed baking sheet to prevent spillage, then place them in the hot oven for about 6 minutes, until the butter has melted.
Grain dishes in the one to melt the butter and heat up the olive oil.
  • Gently remove the baking sheet from the oven, and ever so gently glide the shrimps into the gratin dishes, being careful not to splatter as the oil is hot. Ensure they are placed on an even layer.

  • Once each dish has the shrimp added, please return it to the oven for another 5 to 6 minutes, or until the shrimp are pink and tender. The exterior will be a reddish color, and it is okay if the interior remains opaque. You do not want to overcook them.
  • Remove from the oven, sprinkle generously with the parsley, and serve immediately with crusty bread.

  • I am very diligent about removing all seeds from the peppers and any white-to-yellow interior membranes. This will give you a milder version of the pepper.
  • Leaving the tail end intact, they are easy to eat with your hands.
  • Be very careful when sliding the shrimp into the hot butter oil mixture so as not to splatter, as you can burn yourself. 
  • Place the gratin dishes in a rimmed baking dish to prevent any spillage. 

What dishes can you enjoy with this garlic butter shrimp recipe?

You can enjoy your garlic shrimp as an appetizer; in this case, use fewer shrimp and then proceed with your dinner menu.

We enjoy eating it as a whole first course with crusty bread, but a hot bowl of rice makes it a heartier meal.

Green salad, spicy potatoes, or roasted rainbow carrots and broccolini are a few recipes that pair well with this garlic shrimp recipe.

Variations and Substitutions

Depending on how much heat you can handle, you can add one more chili to this dish. Remember that the deeper red the chili is, the hotter it is.

  • I have substituted Fresno chile peppers for red chile when red chile is out of season.
  • There is always jalapeno red pepper available.
  • Your last resort is to use paprika. Add just a 1/8 teaspoon or less to each gratin dish, since it can be pretty powerful.
  • Being French, I am partial to the baguette, and any opportunity to enjoy as much as I want, trust me, I am the first in line. And all that beautiful sauce is perfectly soaked up by the bread. However, ciabatta or a crusty loaf will make a perfect substitute.
  • A squeeze of fresh lemon juice, optional, gives it a new layer of flavor. Be extremely cautious when adding to hot oil, as it tends to splatter.
  • The leftovers can be warmed up and added to pasta, angel hair, or spaghetti, along with white wine and more parsley. This is a great way to create two different dinners with the same base dish. The chicken broth can substitute for the white wine, just in case.

Storing and Reheating

Store: Any leftovers can be stored in an airtight container in the fridge for up to 2 days.

Reheat: Bring back to room temperature, warm the oil and butter separately, and once warm, add the shrimp for a couple of minutes to heat through.

  • 24 large shrimp, peeled and tail left intact, deveined
  • 6 garlic cloves, peeled and crushed
  • 1 red chili, seeds removed and thinly chopped
  • 1 cup olive oil
  • 4 tablespoons unsalted butter
  • 2 tablespoons parsley, chopped
  • 1 French baguette

Instructions

  • Preheat the oven to 425°F.
  • Sprinkle the garlic and chiles into four gratin dishes. Divide the oil and butter among the dishes.
  • Place the gratin dishes on a rimmed baking sheet in the oven and heat for about 6 minutes or until the butter has melted.
  • Divide the shrimp among the dishes, carefully so as not to splatter the hot oil on yourself, and bake for five more minutes or until the shrimp are pink and tender.
  • Sprinkle with parsley and serve immediately with crusty bread.
