Wok or not?

As you can see, I used my skillet to prepare this fantastic dish. Keep the heat high and watch it as your life depends on it. It will burn very fast under your watchful eye. If you have a nonstick, it will be perfect, too.

However, I use my wok with most of my stir fry cooking. It’s more fun, and when the shrimp are cooked, you can push them up the walls of the wok to keep warm and give the snap peas the last-minute searing.

Ingredients needed to make this recipe

This is a short introduction. The ingredient list is also brief. It includes essential items that you may already have in your pantry. Please read the recipe for complete instructions.

Sodium-free chicken stock – It is always best to use sodium-free so it will not over season your dish

Soy sauce – a must in all Asian cooking

Garlic – gives that wonderful flavor. I have it smashed with salt to bring more seasoning to your dish.

Corn starch – thickening agent to create the sauce around your shrimp

Vegetable oil – best to use under high heat.

Fresh Ginger – I love ginger and it flavors so many dishes by adding a great layer. Here, you will cut them into matchsticks for added boldness. When purchasing ginger, ensure there are no bruising,g, and the skin comes off easily with your fingertips.

Sweet snow peas – delicious and Asian food best partner.

Fresh Shrimps – Medium size works best here. Tail off and deveined.

Scallions – add the onion flavor required for this dish.

Step-by-step on how to make this delicious gingered shrimp with snow peas

With all my recipes, please assemble all the ingredients before starting cooking and baking. This recipe will take just 10 minutes from beginning to end.

Prepare your sauce

  • By whisking together the chicken stock, soy sauce, and the cornstarch. Mix well to remove any clumps that may have formed.

Start cooking

  • The vegetable oil in a wok or skillet over medium-high heat. Add your ginger and stir fry for a minute or so stirring so they will not burn.
  • Add the snow peas and cook until crispy and tender. Keep a watchful eye on them as they can burn easily.
  • Lastly, add your clean shrimp and stir to incorporate well with the other ingredients.
  • Whisk in the stir fry sauce into your wok and stir until the sauce has thickened, about a one minute.

Variations and Substitutions

If you like a bit of heat, add a couple of shakes of chili oil or red pepper flakes.

You can use the base of this dish to create a few variations of your own.

My suggestions are:

  • Sliced mushrooms
  • Red bell peppers sliced into matchstick
  • Zucchini sliced also or into rounds
  • Bok choy cut in half
  • Water chestnuts
  • Small broccoli florets

Storing and Reheating

Store: You can store any shrimp stir-fry leftovers in an airtight container in the refrigerator for up to two days. Ok, you can stretch to three, so I will leave that up to you. Do not go beyond the three days.

Reheat: Bring your shrimp to room temperature and then saute them for a minute on a hot skillet with a dash of water or oil. If you have a microwave, you can use it to reheat them; however, do it in increments as you do not want to overcook them and become hockey pucks hard.

Ingredients 

  • ½ cup sodium-free chicken stock,
  • 2 tablespoons soy sauce,
  • 2 garlic, smashed with salt
  • 1 teaspoon corn starch,
  • 2 tablespoons vegetable oil
  • ½ cup ginger, cut into matchsticks
  • ½ pound sweet snow peas
  • 1 pound shrimps, deveined and tail removed
  • 2 scallions, thinly sliced

Instructions

  • In a small bowl, whisk the chicken stock with the soy sauce, smashed garlic, and cornstarch.
  • In a large skillet heat the vegetable oil until hot. Add the ginger matchstick and stir fry over moderately until they are softened about 1 minute.
  • Add the snow peas and stir fry until they are crisp-tender and the ginger is beginning to brown, about 2 minutes.
  • Add the shrimps and stir fry for 1 minute. Add the scallion and cook for 30 seconds.
  • Whisk in the soy –chicken stock sauce to the skillet and stir fry until the shrimps are opaque and the sauce is thickened, about 1 minute more.
