Published on December 4, 2016 | Fish

Dover sole with caramelized onions in a skillet.

A new recipe created using three of my favorite ingredients: Sole, wine and lemons. The caramelized onions cooking with the white wine work wonderfully together and give such a great flavor to each bite.

On the second day of Christmas
My True love cooked for me
Two Dover sole with caramelized onion
A poached pear in wine sauce

Bon Appetit!!

4 Dover sole
1 yellow onion, cut in half and thinly sliced
2 garlic cloves, thinly sliced
1 lemon, thinly sliced
3 tablespoons unsalted butter
2 tablespoons golden brown sugar
salt and pepper
fresh thyme
1/2 cup white wine

Preheat the oven to 400º.

In a small skillet over medium heat melt the butter. Add the onions, garlic and golden brown sugar and sauté until the onions are soft and translucent, 4 to 5 minutes.

In a large cast iron skillet, or any skillet that is ovenproof, lay on the bottom a bed of thinly sliced lemons. Add the caramelized onions atop and spread evenly.

Add the sole in top, salt and pepper generously and sprinkle fresh thyme all over. add the wine around the fish.

Place in the hot oven and bake for 30 minutes.

Remove from the oven and serve the sole with caramelized onions.
