Pasta with Fresh Tomatoes, Basil and Mozzarella

Fresh tomatoes, fresh basil and mozzarella that is all it took for tonight’s dinner.  We have not had pasta in a while and we were in the mood for a new way to enjoy a great bowl tonight.
I wanted to have the raw tomatoes but knew I could not get away with it.  I seared them with a bit of olive oil and added the basil leaves last.
The fresh mozzarella give a refreshing twist to the pasta. No meat just plain. 

Vanilla ice cream with sugar strawberries to end another great summer day.

FARFALLE WITH FRESH TOMATOES, BASIL AND MOZZARELLA

1 pound Farfalle pasta by Barilla

2 large mozzarella, diced

4 large tomatoes, cut, seeds removed and diced

¼ cup fresh basil leaves cut in thin slices

Unsalted butter

Salt and pepper

Olive oil

Boil a large pot of salted water and cook the pasta according to the package directions. When done drain, place back in the cooking pan and add the butter.

In a large skillet sauté the tomatoes with the olive oil, 5 minutes. Remove from the heat and add the basil.

In a large bowl add the pasta, the tomatoes and mix well. Add the mozzarella and give it a last light folding.

Serve immediately

STRAWBERRIES WITH VANILLA ICE CREAM

Strawberries, cleaned and sliced

1 tablespoon sugar

Vanilla Ice Cream

Place the sliced strawberries in a bowl and let rest with sugar for 20 or so minutes.

Place the desired amount of ice cream in a glass and pour over the strawberries

    I haven’t had pasta for way too long but one look at these photographs and it’s all I want for dinner tonight. I have everything in the house including the Barilla pasta. Dinner sorted and I thank you. 🙂
