Ingredients needed to make this recipe

Tomato puree is tomato juice passed through a food mill with no skin or seeds. My favorite brand is Pomi.
Angel hair pasta, also known as capellini in Italy, is a very thin pasta that cooks relatively quickly, often faster than the cooking time specified on the package. Therefore, starting to check sooner rather than later helps prevent any potential overcooking.
Cherry tomatoes are tasty little morcels that hold lots of flavor and are perfect with all cooked pasta.
Olive oil should be used to marinade the tomatoes and added to your pasta as a condiment. Use a good-quality oil for this process.
Ground pepper and fine sea salt are your seasoning for the tomato puree and for your tomatoes (only salt)
Garlic cloves. One clove enhances the flavor of the olive oil for your tomato reductions, and the other is to be finely chopped and added with the fresh tomatoes.

Step-by-step instructions on how to make these delicious
With all my recipes, please assemble all the ingredients before cooking and baking.
This recipe will go relatively fast; the angel hair pasta cooks at the speed of light.
- In a small saucepan, drizzle the olive oil and gently brown one garlic clove until golden. Once golden, toss and add the tomato puree.

- Cook the tomatoes over medium heat until the puree has reduced by half. It will look like a concentrated, thick sauce. About 10 minutes.
- While your sauce is cooking, slice the cherry tomatoes in half, place them in a small bowl, and season with salt. Finely chop the remaining garlic clove. Mix well and let it marinate for about 10 minutes.

- Meanwhile, bring a pot of salted water to a full boil. Cook the angel hair al dente according to the package instructions, and reserve some pasta water for later use.
- Drain the angel hair pasta al dente and return it to the empty pot. Add some of the starchy pasta water and one tablespoon of olive oil. Incorporate well and ensure the pasta is well covered with the water-oil mixture.
- Spread one to two tablespoons of the tomato reduction in the center of each plate.
- Top with a nest of angel hair pasta, garnish with the cherry tomatoes, and finish by adding a little liquid from the marinade over it.

- Serve lukewarm.

Variations and Substitutions
This pasta dish can be slightly varied by adding fresh basil sliced thin or leaving the small leaves whole.
I sprinkled a few pieces of Parmesan cheese at the last minute.
The cherry tomatoes can be substituted with grape tomatoes.
If no small tomatoes are available, replace them with larger tomatoes; plums are perfect, and cut them into smaller pieces.
If you do not have angel hair pasta at home, spaghetti will be a suitable replacement. Just add more olive oil and a touch more pasta water, and stir until well incorporated.

Storing and Reheating
Store: Place your leftover pasta, marinated tomatoes, and reduced tomato sauce in an airtight container and refrigerate for up to three days.
Reheat: Bring back to room temperature and warm in a skillet with a dash of butter or olive oil and a tablespoon of water. Once warm, serve over the sauce and add the tomatoes as you would in the recipe.

Cherry Tomatoes Angel Hair Pasta

Ingredients
- 2 cups tomato puree
- ½ pound angel hair pasta
- 1 cup orange cherry tomatoes
- 2 garlic cloves
- 5 tablesppoons extra virgin olive oil
- fine sea salt
- black ground pepper
Instructions
- Cut the tomatoes in half. Season them with oil, salt, and 1 chopped clove of garlic. Let them marinate for about 10 minutes while you continue preparing therecipe.
- Drizzle a saucepan with 1-2 tablespoons of olive oil. Gently brown 1 clove of garlic, until golden. Once golden remove from the pan, toss and then add the tomato purée. Season with salt and black pepper.
- Cook over medium heat until the purée reduces by half. The result should be a concentrated and thick sauce. Cover if it splatters too much. Bring a large pot of salted water to a boil. Briefly cook the angel hair and reserve some of the pasta cooking water.
- Drain the angel hair pasta, return it to the empty pot, and whip with 1 tablespoon cooking water and 1 tablespoon olive oil.
- Spread 1 t to two ablespoon of tomato reduction in the center of each plate.
- Top with a nest of angel hair, garnish with the tomatoes, then finish with a little liquid from their marinade over it. Serve lukewarm.
