Party time, or just a drink with your friends, it is always nice to have a couple of nibbles to go along. Those Goat Cheese and Sun Dried Tomatoes are so adaptable. You can serve them over cucumbers or endives for a lighter, more vegetarian dish. Or with toasted French bread or crackers. I like the mix of both thus having way more than I should eat.
Goat Cheese and Sun-Dried Tomatoes Canapes

2 4-ounces goat cheese, softened
4 ounces cream cheese, softened
1 tablespoon lemon zest
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup sun-dried tomatoes in oil, thinly sliced
Vegetables: Endives leave, cucumber peeled and cut in small rounds
Breads: Toasted baguette or water crackers
Place the goat cheese, cream cheese, lemon zest, lemon juice, salt and pepper in a medium bowl. Beat with an electric mixer until well combined and fluffy.
Place a dollop of the cheese mixture on toasted baguette, cracker, endive or cucumber, top with sun-dried tomatoes
