We are hitting record high temperatures and the thoughts of turning on the oven are far from being at the forefront of our mind. However, when you will bite into the peaches of this recipe, you will never be the same again.
Imagine tender sweet roasted peaches drizzled with honey and roasted in the oven. Served with a sweet, but not too sweet mascarpone cream over it. Each bite is just bursting with flavor.
All you need is 5 ingredients and only 20 minutes of cooking.
TIP: The recipe required vanilla sugar. I make my own vanilla sugar but adding all the seeds and the outer pod of a vanilla bean to a jar of regular sugar. I have been doing this for years and it is not only super easy, but a much better way to flavor your sugar. The uses are endless and with the baking season just around the corner, you will be ahead of the game.

Ingredients

4 large peaches

2 tablespoons honey

⅔ cup mascarpone

3 tablespoons vanilla sugar (sugar + vanilla beans)

1 tablespoon lemon juice
Instructions

Preheat oven to 400F

Cut the peaches in half and remove the pit and place them inside a gratin dish placing cut side up. Sprinkle honey all over and place in the hot oven for 20 minutes.

Mix the mascarpone, vanilla sugar, and lemon juice in a bowl. Once the peaches are done spread the mascarpone with the help of a spoon and spatula.
Serve immediately.
