What is Rock Cod Fish or Rockfish?
Rock codfish is also known as Pacific Ocean perch. It is an excellent white-fleshed fish, making it one of the best options for quick and easy meals. It is a favorite in both Asian and American cuisines.
Rock cod is a saltwater fish native to the Easter Pacific. Sometimes labeled as Pacific snapper or red snapper.
Pacific rockfish are commonly found near shore on Northern America’s West Coast.
You will find an abundance of cod recipes in Asian cooking. Most versatile of fishes when it comes to cooking: pan-fried, grilled, steamed, and even raw.
Breaking from my comfort zone, I had some ginger that I needed to use and came up with this marinade concoction.
I love to blend ginger and honey; combined, the two are so powerfully delicious. Sweet and tangy, a perfect combination of flavors.
I decided to use Asian flavors for the marinate. Rice vinegar and dark soy sauce were two of my favorites. I just had fun.
And let’s not forget the garlic. It would not have an Asian flair if the garlic were missing.

What is soy sauce?
Fermented soy sauce is a liquid condiment. It is of Chinese origin.
Traditionally made from a fermented paste of soybeans, roasted grains, and brine.
It is considered to contain a strong umami flavor.
Soy sauce is known as shoyu and soya sauce. It is the fermentation process of soybeans, and salt is used to make it.
Soy sauce contains wheat, also.
While making the soy sauce, the soybeans are soaked in water for several hours. Then the fermented soybeans have been steamed. Wheat is roasted, ground into flour, and mixed into the steamed soybeans.
I use soy sauce as a dipping sauce when I have potstickers. In a small bowl, I mixed it with some Japanese rice vinegar.
However, you will find various types of soy sauce on the market. The most common is the Japanese soy sauce: Koikuchi Shoyu, a dark soy sauce.
And the usukuchi shoyu is a light soy sauce with a mild flavor.
Most recipe call for regular soy sauce, readily available at your local grocery store.

Cooking tips and step-by-step instructions to create this excellent rock cod in ginger soy sauce marinade.
As with all cooking, have all your ingredients ready before cooking. This recipe is quite straightforward.
- A quick marinate will elevate the flavor of the rock codfish.
- The food processor will liquefy all the solid ingredients while emulsifying them with the liquid. I don’t know about you, but it overwhelms the other flavors when I bite into garlic or ginger. Consequently, I don’t enjoy them as much. This process will give you an even taste of broth, garlic, and ginger.
- Do not over-marinate the fish; longer than 1 hour or 30 minutes is perfect.
- Recommend not picking the fish meat. The sauce will penetrate no matter what, and you do not want your fish to break while cooking it.
- You can keep it outside of the refrigerator, however, do baste it and turn it occasionally.
- Prepare all your side dishes before starting to cook the fish. Once you start, you have just a few minutes before it is time to serve it.
The ginger adds that kick of flavor to this ginger soy marinate. However, use as much as you wish or as little as you want of ginger, but do use it.

How to cook rock cod
When you are ready to pan-fry your cod, take it out of the soy ginger sauce.
Saute it for three minutes on each side.

Fried noodles and fried rice are the ideal accompaniment to this delicious dish. However, you can experiment with different flavors too.
Here are some recipes to help you get started.
- The roasted tomatoes burst with flavor and are an excellent side dish combination while maintaining the meal gluten-free.
- Stir Fry Vegetables is another combination that complements quite well.

Rock Cod in Ginger Soy Sauce Marinade

Ingredients
- 2 pounds rock cod fish
- 1 teaspoon Olive oil
Instructions
- Make the marinade by combining all the ingredients in a food processor or blender until well blended.
- Season the rock cod generously with salt and pepper on both sides. Pour most of the marinade over the fish, reserve a couple of tablespoons to drizzle over the cooked fish. Marinate from 30 to 1 hour.
- In a large skillet add the olive oil and sauté the fish for 3 minutes per side until golden.
- Drizzle remaining marinade over the fish and garnish with parsley (optional)

Yes, it would. Bake it at 350F, not higher, and keep a watchful eye on it.
